In 2021, Giovanni Cozzi and his son Alessandro Cozzi recognized a rising demand in the United States for sophisticated, non-alcoholic adult beverages. Inspired by their deep appreciation for the Italian tradition of savoring Amaro after dinner, they set out to reinterpret this timeless ritual for a modern, alcohol-free lifestyle.
The love of Amaro is a deeply rooted Italian custom — a refined way to conclude a memorable meal. Originating centuries ago in Italian monasteries, where monks perfected the art of extracting, infusing, and fermenting bitter herbs, Amaro evolved into an essential element of Italian dining culture.
Driven by a commitment to authenticity, Cozzis traveled traveled extensively throughout Italy, researching traditional formulations, regional botanicals, and time-honored production methods. Their journey led them to Liquorificio Italia in Trieste, where they found the ideal partners to bring their vision to life.

This collaboration gave birth to AmarNo — a refined, non-alcoholic interpretation of Italian Amaro. A creation that preserves the complexity, ritual, and pleasure of a traditional digestivo, while offering a more conscious and balanced experience.
Building on the success of AmarNo, the partnership introduced AperZero in 2026 — a sophisticated, non-alcoholic aperitivo designed to capture the true essence of the Italian aperitivo moment, reimagined for a new generation.
